Vinification
Harvested 2021, pressed as whole bunches. Fermentation and ageing takes place in stainless steel vats under temperature control. Second fermentation in the bottle and 15 months sur lattes, 8g dosage. Remuage, disgorgement and bottling are also carried out at our wine estate
